Grilled Cheese Sandwiches

Ingredients

Sliced bread of your choice

Extra old cheddar cheese

Patak's chile relish

Pesto

Margarine

The quantities you would need depend on how many grilled cheese sandwiches you want to make.

Patak's chile relish is available in Indian grocery stores.

Ingredients

For each sandwich, use a teaspoon of chile relish and a teaspoon of pesto. Mince the chili pieces in the relish. Spead the minced relish and pesto as shown in the picture.

Add a layer of thinly sliced cheese as shown. Place the slices with pesto on top of the slices with the relish. Add a thin layer of margarine to one side of the sandwiches as shown.

Heat a griddle or a pan on high heat. When the griddle is very hot, carefully place the sandwiches on the griddle (margarined side down). Add a thin layer of margarine on the top side. Cover the sandwiches with aluminum foil and lower the heat. Cook for 3 to 4 minutes and turn the sandwiches.

Cover and cook the other side for 3 to 4 minutes on low heat. Check if the cheese has melted. If it hasn't, cook for a couple more minutes.

Serve hot with cucumber pickles.

Variations

These sandwiches can be made with either pesto or chile relish. Use different kinds of bread such as whole wheat, kimmel, multi-grain, etc.
